Pimento-goat cheese burgers recipe

Step 1
Prepare outdoor grill for direct grilling over medium-high heat. In large bowl, gently mix ground chuck, cheese, green onions, garlic, pimentos, Worcestershire sauce, salt and pepper (do not overmix); form mixture into 4 (1/2-inch-thick) patties. Spray patties and red onion slices with cooking spray. Spread cut sides of rolls with butter.
Step 2
Place patties and red onion on hot grill rack; cover and cook 10 minutes or until internal temperature of burgers reaches 160° and grill marks appear on red onion, turning once. During last 2 minutes of cooking, place rolls, buttered side down, on hot grill rack; cover and cook 2 minutes or until toasted, turning once.
Step 3
Spread cut sides of rolls with mayonnaise; top bottom halves with burgers, tomato, red onion, arugula and top halves of rolls, mayonnaise side down.
