Step 1
Preheat oven to 400° F.
Step 2
Take a small bowl and whisk together lemon juice, oregano, basil, garlic and olive oil in the bowl. Season with salt and pepper to taste.
Step 3
Place zucchini, onion and tomatoes onto skewers. Put skewers on a baking sheet and brush with olive oil mixture. Let sit for 10 to 15 minutes. Then, place in oven for 10 to 12 minutes. Continue the roasting process until tender, then serve.
