Hoisin-Glazed Salmon Sandwich with Bok Choy Slaw Recipe

Step 1
Preheat oven to 400°; position 2 oven racks to upper and center positions. Line rimmed baking pan with parchment paper; spray with cooking spray. Place salmon on prepared pan; brush with half the hoisin sauce. Roast salmon on center oven rack 7 minutes; brush with remaining half the hoisin sauce. Place buns, cut side down, on upper oven rack; roast salmon and buns 5 minutes or until internal temperature of salmon reaches 145° and buns are lightly toasted.
Step 2
In medium bowl, whisk mayonnaise, lime juice, soy sauce, honey and oil. Add cabbage, bok choy, carrots and cilantro; toss. Makes about 2½ cups.
Step 3
Place salmon on bottom halves of buns; top with slaw, additional cilantro and top halves of buns.
