Sweet Apple Grilled Chicken Wings with Chipotle-Goat Cheese Dressing

Step 1
Prepare outdoor grill for direct grilling over medium-low heat. With kitchen scissors, snip off wing tips; discard. In large bowl, toss wings, oil, salt and pepper. Place wings on hot grill rack; cover and cook 25 minutes or until internal temperature reaches 165°, turning once. (Chef's Tip: To create crosshatch marks on chicken wings, use tongs to turn the wings a quarter turn halfway through the grilling time on each side of the chicken).
Step 2
In medium bowl, stir mayonnaise, cheese, cilantro, chipotle en adobo, vinegar and chives. Makes about ¾ cup.
Step 3
In large bowl, toss wings and ½ cup BBQ sauce. Serve wings with remaining ½ cup BBQ sauce for dipping along with carrot and celery sticks garnished with chives, if desired.
Step 4
