Step 1
Place chicken in large zip-top plastic bag; pour vinaigrette over chicken. Seal bag, pressing out excess air; massage chicken in bag to coat. Refrigerate chicken mixture at least 1 hour or up to overnight.
Step 2
Soak skewers in water 20 minutes.
Step 3
Heat large nonstick skillet over medium-high heat; spray with cooking spray. Add chicken mixture; cook 8 minutes or until internal temperature reaches 165°, stirring occasionally.
Step 4
Alternately thread tomatoes, pickles, buns, onion and chicken onto skewers.
Step 5
Serve skewers drizzled with mayonnaise.
